This vegetable tofu stir fry is an easy, healthy and delicious dish for two. This version elminates a lot of the work by purchasing a prepared frozen vegetable mix. Frozen vegetables may even be healthier than fresh since they have not been sitting around as long before being frozen. Cube half a package of Nasoya tofu (freeze the other half for future use). Cook the tofu in olive oil either in a frying pan or in your toaster oven at 400 degrees. Cook to desired taste. Heat 2 tbsp. olive oil in a frying pan along with 2 cloves of garlic. If you like ginger, fresh grated ginger can be added at this time. Add in the vegetables and cook until ready. When vegetables are done, remove from the heat and add the desired amount of soy sauce along with salt and pepper to taste. Top with the tofu and seeds.
