Think of Chinese food and you think of fried rice. Most chinese restaurants serve fried rice as an accompaniment to most of their dishes. Now you can make a vegetable fried rice at home that is fairly easy and healthy as well. This recipe is loaded with healthy starch, lots of fiber and if you add the meat from the tips section, a whole meal in one pan. Cook rice and drain. (Use package directions). Cut onions into small pieces. Sautee the carrots, onions and snow peas in a skillet sprayed with the veggie oil over medium high heat. Cook the veggies as long as you like to the desired crispness. Most restaurants cook vegetables until crisp but a bit tender. I like mine a little more cooked than that. Add the ginger and garlic and cook another minute. Move the rice aside making an empty center in pan. Add the eggs to the center of the pan and stir the eggs until set. Mix the eggs into the rice mixture. Stir in soy sauce and sesame oil. Serve immediately.
