An easy recipe for a delicious strawberry sponge layer cake. This mouth watering fresh cake, topped with confectioners’ sugar and strawberries, is perfect for any occasion. Preheat oven to 350 degrees. Grease the bottom of the jelly roll pan with oil or melted butter. In a large bowl, sift the flour and baking powder. Add the butter, sugar, eggs, and vanilla extract. Beat the mixture until it is smooth. Add the milk; beat. Spoon the mixture into the jelly roll pan. Bake in oven for about 20 minutes or until firm and golden brown. Let cool until cake is cold. Remove cake from the pan and slice the cake, lengthwise, into 3 long rectangles. Clean and hull the strawberries. Slice 4 strawberries and set aside to use for decorating the top of the cake. Chop the remaining strawberries and stir into the mascarpone. Spread half the mixture on the top of one of the cake slices.
