The Tortilla Patata is a staple in any Spanish home or restaurant. Delicious served hot or cold, it requires just three ingredients! Wash potatoes and cut into thin slices. In Spain, the potatoes are usually peeled, but you can also use red potatoes with the skin on. Chop onions into fairly fine pieces. Heat approximately 1/3 cup of cooking oil in a frying pan. Add potato slices and chopped onion. Fry on medium heat, gently stirring as needed so as not to break the potato slices. Add salt to taste. Beat the eggs in a mixing bowl. Once the potatoes are soft and the onions are translucent, pour the potato/onion mixture into the eggs and mix well. Pour the potato/onion/egg mixture back into the frying pan (add a small amount of oil first if needed) and cook on medium heat to brown the first side.
