Sourdough bread does not start with a package of yeast. Instead it starts with a small mixture of whole grain flour and water that has been allowed to grow. In effect, the yeast that is naturally found on the grain reacts with water and air and begins to grow. It takes about a week to grow a sourdough starter to the point at which it is ready to be used in baking. Stir 3/8 cup organic stone-ground whole wheat or rye flour with ¼ cup bottled spring water in a 4-cup glass or plastic container. Cover the mixture with plastic wrap. Wait for 12 hours.
