Why go out to eat when you can follow an easy spanish rice recipe and make it at home? This delicious rice will compliment almost any meal you are eating. Simple, fast, and easy! Heat 3 tablespoons of oil in an 8 inch skillet over medium heat. Add 1 cup of uncooked rice (white rice or brown rice will work). Add 1 small diced onion to the pan as well as 1/4 cup diced green pepper (optional), and a dash of salt. Continue to stir ingredients in pan until rice begins to turn brown and the diced onion is transparent. Add 3/4 cup tomatoes with juice. Typically stewed tomatoes are used, but any canned tomato will work great! Add 1 1/2 cups of water to the pan and bring ingredients to a rapid boil. Cover tightly with a lid and lower heat to simmer. The Spanish Rice will need to cook for 30-45 minutes, or until all liquid has been absorbed. Enjoy!
