This sauce can be made from “ANY” type of fish that you may be preparing at the time. I generally keep frozen shrimp on hand and I really like to use that, but whatever you are making now is perfectly acceptable to make this sauce. Trim some of the fish you wish to cook. Just take a little off the edge, not enough to compromise the piece you want to cook, but enough to use in a little sauce. If you have shrimp on hand, thaw and chop very fine. Put a saucepan on the stove and set on low. Melt about one or two tablespoons of butter and sauté a bit of very finely diced onion and one clove of garlic.
