How Do You Make A Simple And Delicious Chard Frittata?
My husband made this for me one weekend, and if he can cook it, so can you! This is a great addition to any brunch. It can be sliced like a pizza and enjoyed by many. Or, if it’s just the two of you, you can refrigerate the extra and enjoy it the next day. Wash the chard (see my “Clean Your Greens” article) and pull apart the stems from the leafy greens. Cut the stems into ΒΌ inch slices, and chop the greens. In a 10″ pan or skillet, heat 1 tbsp olive oil over medium heat. Add the onion and cook for about 5 minutes. Then add the chard stems and some salt to taste. Cook for 5 more minutes and then add the leaves. Cook until the leaves are tender. Then put everything onto a colander so some (but not all) of the extra moisture can escape. Crack the eggs into a bowl and whisk. Add a few grinds of fresh black pepper, the cayenne, and the garlic. Add the drained chard and onions. Wipe out the pan you used to cook the onions and chard and heat it on medium-low. Spray it with non-stick spray. P
