Busy moms want to serve their families delicious, healthful recipes. But some nights, exhaustion takes a front seat and the kids end up sitting down to a meal of sandwiches or take-out pizza. Here’s a very quick and easy way to make a hot, healthy meal: chicken Parmesan in a few simple steps. Preheat oven according to the directions on the package of frozen chicken breasts. Arrange chicken breasts in a baking dish (or on a cookie sheet), and place in oven when it has preheated. (For easier clean up later, line your dish or baking sheet with aluminum foil.) Boil the spaghetti until it’s done. Heat up the spaghetti sauce. Drain the spaghetti. Remove the chicken breasts from the oven, and immediately top each breast with a couple of tablespoons of the spaghetti sauce and some mozzarella cheese. To plate, put a serving of spaghetti, top with sauce, and finish by adding the sauce-and-cheese-covered breaded chicken breast.
