How Do You Make A Russian Sweet Beet Salad-YUMMY?
Preparing Russian salads is always a treat for a hostess. One of my favorite salads in the entire world is the Russian Sweet Beet Salad and I had to search long and hard for a recipe. This recipe does not include the garlic version partially because I hate garlic. Place the 5-6 beets in a saucepan/soup pot and fill the pot with enough water to cover the beets. Bring them to a boil (which will take about 5-7 minutes) and then slowly cook them under medium heat until the beets are pierce able. This will take about 20 minutes. Once the beets are soft, run the pot under cold water for about a minute. Peel and grate the beets in a serving bowl. Grate the walnuts and cut the prunes into small pieces and add the mixture to the grated beets. Put mayo and a pinch of salt into the mixture and mix everything.
