Recipe for Fruit Cocktail and Custard Cake with SUGALite Ingredients Cake 125ml (1/2 cup) Cake Flour 5ml (1t) Baking Powder Pinch of Salt 125ml (85g) Sugalite® 3 Large Eggs, separated 15ml (1T) Lemon Juice 2.5ml (1/2 t) Vanilla Essence Filling 500ml (2 cups) Fat Free Milk 125ml (85g) Sugalite® Pinch of Salt 10ml (2t) Vanilla Essence 1 Large Egg 75ml (3T) Cake Flour 1 Tin Fruit Cocktail (Suitable for diabetics) Method Cake: 1. Sift the flour, baking powder, salt and Sugalite® together. Beat the egg whites until they are stiff. 2. Beat the egg yolks, lemon juice and vanilla essence together. Combine both the egg mixtures together and fold them into the dry ingredients. 3. Line and grease a Swiss roll baking tray and pour the mixture into it. Bake in a preheated oven at 200ºC for 10 – 12 minutes. Turn out and leave to cool. Cut off the edges and cut the cake in half. Filling: 1. Bring the milk, Sugalite® and salt to the boil in a pot, ensure that all the Sugalite® has dissolved. Mix the v
