This is a quick and easy recipe for chicken stew on those nights you don’t have time to cook or just don’t want to cook. The first thing to do for your chicken stew is dice your chicken into large pieces. Cut your carrots, celery and yellow onion into medium size dice about 1/4 inch thick. The next step for this chicken stew is to add your olive oil to a hot pan then add the chicken and sear all sides. Once the chicken is seared on all sides add your garlic, carrots, celery and onion to the pan. Once your onion is translucent add your frozen vegetables and continue to cook for 2 more minutes. The last step in your chicken stew is to add your can of cream of chicken soup and let simmer for five minutes. Make sure your chicken is cooked through. Heat your dinner rolls and enjoy your chicken stew. This recipe takes me less than 20 minutes from start to finish.
