Anytime is the perfect time of the year to make a big pot of healthy “red soup” or vegetable soup. When I was a little girl, my mom always made a pot of this “red soup”, as she would call it. You can add just about anything to this vegetable soup that you desire. In a medium frying pan, brown the beef stew meat. If the pieces are too large, you can cut them into smaller bite sized chunks. Finely chop 1 small onion. Put in with the beef stew meat as you brown it in the frying pan. Wash and peel potatoes, then cut them into small bite sized pieces. Bring water in a large pot to a boil. Add browned beef stew meat to the boiling water. Cook for an hour over medium heat. Add potatoes to the boiling water. Add salt and pepper to taste. Boil until the potatoes are slightly tender. Open the cans of tomato paste and tomato sauce and carefully add to the pot of boiling water with beef stew meat, onions and potatoes. Bring it to a boil again over medium-high heat.
