Pineapple coffee cake is a special treat. This recipe is made from scratch. Prepare the coffee cake ingredients: * 1 1/2 cups of sifted flour * 3/4 teaspoon of salt * 1 large egg, beaten * 1 cup of pineapple juice * 1/2 cup of sugar * 1/4 cup of melted shortening * 2 teaspoons of baking powder Sift the flour, sugar, baking powder and salt together into a large mixing bowl. Combine the egg, shortening and pineapple juice together. Then mix it to the dry ingredients, beating until smooth. Put into a 9-inch greased cake pan. Make the topping using these ingredients: * 1/2 cup of sugar * 1 tablespoon of butter * 1 teaspoon of cinnamon * 1/3 cup of crushed pineapple, drained Mix all of the topping ingredients and sprinkle over the coffee cake batter.
