How Do You Make A Pina Colada Pudding Cake?
I found this recipe in an old cookbook and wanted to share it since at the time of this writing, there was no recipe for this in ehow. The recipe even tells how to adapt it for high altitudes—See Article Tips. Happy Baking! In a large mixing bowl, Mix all the cake ingredients with an electric mixer. Beat for 4 minutes at medium speed. Pour into 2 greased and floured 9″ layer pans. Bake at 350 degrees for 25 – 20 minutes or until cakes spring back when lightly pressed with fingers. DO NOT OVERBAKE!!! Cool in pans for 15 minutes; remove and cool on racks. FOR FROSTING: In a mixing bowl, combine pineapple, pudding, and rum. beat until well belnded. Fold in Cool Whip.
