How Do You Make A Perfectly White Buttercream Icing?
There are certain times when only a perfectly white buttercream frosting will work for a cake. Either the color needs to be white (like for a wedding) or the buttercream will be tinted and true colors are needed for the decoration. Often, when whole butter or margarine is used, it will tint the buttercream a slightly ivory color, and when colors are added they may be muted or off color. Using colorless flavorings will also help keep the buttercream white. Take the shortening and cream very well with hand mixer until light and fluffy. Scrape the sides well. Add in the powdered sugar in parts until well blended, scraping the sides and bottom several times. The mixture will get very thick. Add in the whipping cream and the clear extracts. Drizzle in the water, a teaspoon at a time, until the buttercream is of the consistency needed for the cake. Continue beating until smooth and fluffy. Use for decorating.
