I LOVE this cheesecake. It is easy as pie to make. I learned it from my step-dad. He is the greatest cook I have ever met. He showed this to me so I could make it for the rest of my family. Goes over really well with in-laws too…hahaha put cream cheese into mixing bowl. Mix cream cheese on medium speed til it is nice and soft or broken up a bit. Add the vanilla and mix. When you are done with that add powdered sugar slowly so it wont come flying out at you as you mix it in. Then add cool whip. Mix well… It may have a few lumps in it. It is o.k. Add to pie crust and put in refrigerator for a little bit then cut and serve…. YUM!!!
