How Do You Make A No Bake Sweet Potato Pie?
This is a delicious sweet potato pie recipe that I created when my oven broke the night before Thanksgiving. Be sure to make it ahead of time because it needs to chill in the fridge for at least a few hours and is best eaten cold. In a large pot, boil sweet potatoes in their skins until tender. Drain water and run cold water over the sweet potatoes. Once they are cool enough to handle, the skins should peel off easily in your hands. Use a mixer to whip the sweet potatoes until smooth. On the stove, in a medium saucepan, melt butter over low to medium heat. Add the brown sugar and stir until the mixture is uniform in color. Get a small bowl with about 1-2 tbls. water and sprinkle gelatin over the water. Stir until it is combined and then add to butter and brown sugar mixture. It should now mix in easily. Add 2 cups of mini marshmallows to your saucepan. Keep stirring until all the marshmallows are melted and the entire mixture is one color. Remove from heat and pour directly into your w
