How Do You Make A Mushroom Dry Rub?
If you like mushrooms, especially fully flavored wild mushrooms, try this dry seasoning. It can be easily made from the dried wild mushrooms now commonly available. Heat the oven to 250 degrees F. Crumble the mushrooms with your fingers over a cookie sheet. Toast the mushrooms for 15 to 30 minutes. This removes any remaining moisture. Allow the mushrooms to cool. Place them in a food processor or spice grinder and grind them as finely as possible. Place the ground mushrooms in a fine mesh strainer and sift over a mixing bowl. Pour the larger pieces left behind in the strainer back into the food processor. Grind them again and sift. Use the sifted mushroom powder as a dry rub. Dust it on food, especially fish, with some salt and pepper before cooking.
