The pumpkin is a largely ignored fruit, except during Halloween and Thanksgiving, yet it is one of our most nutritional. Finding low-fat ways to include this in our diets is easy. Here is a delicious low-fat recipe for pumpkin cake, which is not only delicious, but rich in Vitamin A, and C, potassium, and fiber. This easily could be sliced and served for a nutritious breakfast, after all kids will never turn down cake! In a large mixing bowl, combine all cake ingredients. Stir for two minutes or until well mixed. Pour the cake batter into a well greased Bundt pan, or one that has been sprayed with a cooking spray. Bake at 350 degree’s F, for 35 to 40 minutes, until cake springs back lightly when touched. Let cool for 30 minutes in the pan. Place on a cake platter and glaze with the following icing. In a small bowl, mix the powdered sugar and vanilla. Add water 1 tablespoon at a time until it has a runny consistency. Drizzle over the entire cake and enjoy!
