Using sunflower oil, grease base and sides of cake tin. Line with baking parchment paper. In a large bowl, beat together black treacle and margerine until well blended. Add in one egg at a time to treacle mixture. Sift in flour, add mixed spice and salt. Mix by hand until smooth. Gently fold in sultanas, raisins, currants, sherry, orange zest and juice. Pour mixture into prepared cake tin. Spread in an even and smooth layer. Use a teaspoon to create a small well in the middle. Bake for 2 – 2.5 hours until a golden brown. If the top goes dark too quickly, place greaseproof paper over the top for the remainder of baking time. R
