I still wouldn’t consider this to be diet food, but it is a good low-fat holiday party food with less guilt and calories than the full-calorie version. Mix together all ingredients except the parsley and crackers. Form the cheese mixture into a ball or a log. Roll the blue cheese ball or log in chopped parsley. Place the blue cheese ball or log on to a piece of foil big enough to wrap it well. You might want to use nonstick foil so the cheese doesn’t stick to it. Refrigerate for at least a couple of hours. Serve with crackers.
