How Do You Make A Low Fat Blue Cheese Ball?
Cheese balls are a favorite appetizer for holidays and parties. Most often cheese balls are made out of cheddar cheese which is fine, but if you want to change things up a bit, why not make a blue cheese ball? The richness of the blue cheese makes it easy to get away with using nonfat cream cheese without sacrificing taste and rolling the finished blue cheese ball in parsley instead of chopped nuts also reduces the overall calorie count. I still wouldn’t consider this to be diet food, but it is a good low-fat holiday party food with less guilt and calories than the full-calorie version. Mix together all ingredients except the parsley and crackers. Form the cheese mixture into a ball or a log. Roll the blue cheese ball or log in chopped parsley. Place the blue cheese ball or log on to a piece of foil big enough to wrap it well. You might want to use nonstick foil so the cheese doesn’t stick to it. Refrigerate for at least a couple of hours. Serve with crackers.
