Allow yourself an hour or so of time in the kitchen and it will pay off with several more nights of great meals. MEATBALLS: In a large bowl, add all the meatball ingredients. Using your hands, mix well but gently, folding the mixture over itself sort of like you’re kneading bread. Overworking the mixture will result in tough meatballs. I like to wear kitchen gloves for this step. Before you start forming meatballs, take about a tablespoon of the mixture, put on a microwave-safe plate and nuke it for about 30 seconds. This way you can check for seasoning before you make a few dozen meatballs. Adjust seasoning if necessary. Prepare a large baking sheet by covering it with foil for easy clean-up and placing a rack
