This Japanese cucumber salad is best when you use the Japanese style cucumbers; they are longer and thinner and don’t have as many seeds. You can use the average American cucumber too, it’s strictly up to the cook. 🙂 I don’t know the reason why, but whichever cucumber you end up using, with this salad mixture you just don’t have those awful cucumber burps an hour after eating. So whip up this yummy 5 minute salad and burps be gone! To make Japanese cucumber salad, put all ingredients in the bowl and mix very well using a whisk. You need to make sure the sugar is thoroughly dissolved. Okay, now your sauce is done. 🙂 Next, wash cucumbers well. Slice off the ends. (Do not remove peel). Now slice the cucumbers in half lengthwise. Using a small spoon, gently scrape out any seeds and discard.
