This Roast Beef Po’Boy is a great way to use up leftover roast. If you’ve ever wondered how to use leftover roast beef that has dried out in the refrigerator, this is the perfect solution. This sandwich is moist, tender and packed with flavor. The next time you see roast beef on sale, go ahead and buy extra. You won’t be disappointed with this recipe. Preheat oven to 350 degrees F. Place the sliced roast beef in a baking dish or casserole. Pour enough beef gravy over the top to completely cover the meat. Canned gravy is fine, but homemade is always better, and more affordable. Seal tightly with foil. Bake at 350 F for 1 hour. Remove from oven. On a sliced sandwich roll, layer hot roast beef with gravy, shredded lettuce and sliced tomatoes. The sandwich is excellent sans cheese, but it can be added if desired. Close the sandwich and place under the broiler just long enough to crisp the top of the bread.
