Penne alla Vodka is a very popular Italian dish, but it can be filled with extra fat from heavy cream and loads of oil. By making a few simple changes and changing from white to wheat pasta, you can make a simple, healthy dish that your family will love. Pair with a fresh salad to make it a meal. In a heavy sauce pan, heat the olive oil over medium heat. Add the crushed red pepper, onion and garlic. Sautee for about 3 minutes until the garlic and onion start to get a little soft. Add both cans of tomatoes, basil and vodka and stir well. Bring to a boil. Then reduce the heat and prepare the penne pasta. About a minute before the pasta is add the evaporated milk and stir well. Pour sauce over well drained pasta (this recipe will cover 1 pound of pasta). Top with freshly grated Parmesan cheese.
