A complete meal in a dish, this easy to make hash brown potato crusted bacon quiche makes a great breakfast, brunch, or dinner. Preheat oven to 450 degrees F. Crust: Thaw and drain hash browns and press between paper towels to dry as much as possible. Press hash browns in the bottom and up the sides of 9″ pie plate. Melt butter and drizzle over the hash browns. Bake 20-25 minutes until edges of potatoes are crisp and golden brown. Filling: Dice bacon and sauté in skillet until lightly brown. Place bacon in bowl. Sauté diced onion in skillet until tender. Remove from heat; stir in flour, salt, and pepper. Blend in. In large bowl, combine eggs and milk; stir in cheese, onion mixture and bacon pieces. Pour filling into baked hash brown potato crust and place in 350 degree F. oven. Bake 25-30 minutes or until quiche is puffed up and golden brown. Let cool slightly before slicing.
