A great meal to warm up a cold winter’s day. The roasted root vegetables provide a great seasonal taste. Preheat the oven to 450 degrees. Wash and peel all the vegetables. If you bought beets with the greens then wash the greens and set aside. Cut each vegetable into even cubes about 1/2 to 1 inch in size. Place cut vegetables into a large bowl. Drizzle with olive oil and toss vegetables to coat. Add any desired spices such as ground sage, dried thyme and / or dried rosemary. Line a cookie sheet (or two if needed) with aluminum foil and arrange vegetables in one layer. Place vegetables in oven and let them roast for 35 – 40 minutes. If using two cookie sheets rotate their location in the oven after about 20 minutes. About 5 minutes before the vegetables finish set a large saucepan on the stove and add broth. Bring broth to a boil. Remove vegetables from the oven and add to the saucepan. If desired then place beet greens into the saucepan as well for added color and flavor. Simmer 5 – 1
