Beefy Bulgur Pilaf is a hearty, economical, and delicious all-in-one meal. My family loves it because it is so yummy. I love it because it is fuss free and nutritious. This recipe is very flexible and can be made with beef, chicken, or meatless. Freezes well and travels well. Try it, you’ll like it! Sauté the onions and peppers together in the butter or margarine until soft. Add the hamburger (or chicken) and sauté it until it is cooked and no longer pink. Add the rest of the ingredients (beef bouillon cubes, tomato paste, salt, pepper flakes, bulgur, and water) and stir it to combine and bring it to a boil. Cover it and let it simmer on low for about 10-15 minutes. Remove it from the heat and let it rest, covered, for 10-15 minutes. No peeking! Serve it hot with a dollop of sour cream or plain yogurt on top.
