This cake, contrary to belief is actually a cocoa cola cake, not Coca-cola cake. It’s the perfect blend of cocoa and cola sweetness. Preheat the oven to 350 degrees Fahrenheit and grease a 13 x 9 inch cake pan. Sift the all purpose flour and granulated sugar together in a large mixing bowl and set aside. Melt the margarine in a sauce pan. Mix the cocoa and cup of cola with the margarine in the sauce pan and bring to a boil. Use what brand of cola you prefer the most, even generic cola is fine, as long as it’s not diet cola. Cool the the mixture in the saucepan slightly and add to the flour and sugar mixture. Stir until blended well. Mix in the buttermilk, beaten eggs, baking soda and vanilla. Last but not least, stir in the marshmallows. Pour cake batter into the cake pan and bake at 350 degrees Fahrenheit for 40 minutes or until toothpick comes clean out of the center. Mix the frosting while the cake is baking.
