It gives the tea a crisp and refreshing flavor and the trick is in the way you brew it. This is a simple way to make Egyptian mint tea that you can serve to guests or for your own pleasure. You fill a teapot with water then turn up the heat until the water is boiling. You turn off the heat. You then place the black tea and mint leaves in a tea cosy and then pour the boiling water into the tea cosy. Leave it for 2 or 3 min until the tea is brewed. You then pour the tea into tea cups or in small glass cups a little bigger than shot glasses as it is traditionally served in Egypt.
