Combine one package or 2 ¼ tsp of yeast with 1 ½ cups of warm water. Add 2 tbsps. of brown sugar to the warm water. Stir until all the sugar and yeast are mixed. Let the yeast dissolve and stand until it becomes bubbly. Add 4 cups of all purpose or bread flour to the mix a little at a time. Add 1 tsp. of salt. Make sure the ingredients are well mixed. Sprinkle flour on your counter top. You want a large enough area to roll out long pieces of dough. Pour your dough mixture onto the counter. Knead your dough for about 10 minutes. You want the mixture to have an elastic texture. Add a sprinkle of flour if the dough sticks to the counter. Oil a metal bowl and place the kneaded dough inside. Cover with a tea towel and let it rise for 1 hour. Add 2 tbsps. of baking soda to 2 cups of warm water in a metal
