There are many different varieties of rich, creamy cheesecake and several delicious recipes for the crust. It is a great dessert for holidays, birthdays or just about any occasion. The crust is easy to make and just as important as the cheesecake and topping. Step 1 Chop the chocolate cream cookies into small pieces. Scoop up the chopped cookies and place them in your mixing bowl. The cookie cream creates a nice moist cheesecake crust. Step 2 Crumble and mix the cookies with your hands. Continue mixing until the cookies become a nice powdery mix. Step 3 Coat the bottom and sides of your pan with a nonstick spray. Use a generous amount, as you can’t over spray. Step 4 Spoon the cheesecake crust mixture into the pan, making sure it’s evenly distributed. Move the pan gently from side to side, leveling out your mixture. Step 5 Press the crust mixture into the pan. Cover the bottom and bring the mixture ½-inch up the sides. Use the bottom of a glass to press the crust flat and even. Step 6
