The recipe for the cauliflower frittata serves about six to eight people, but it is not a fast recipe, it does take about forty five to prepare and an hour to cook. The first step is to preheat the oven at 350 degrees F, and spray the bottom and sides of the pan that you are going to use with a non-stick spray. Then heat a skillet with olive oil over medium heat for 1 minute, and then you are going to sauté the onions for five minutes or so. Next add the cauliflower and garlic and a pinch of salt and cook still on medium heat for about ten minutes and then remove from heat. At this point add the bread crumbs to the mix, and put the mix in a pan then add the cheese. Now beat your eggs until they are smooth and frothy and add the parsley and scoop the egg mixture in the pan. And bake in the oven for 30 minutes. Once it is ready, let it cool down for 10 minutes before serving.
