This easy to make salad can make refreshing side salad or as a quick snack with tortilla chips or pita bread. It also makes a healthy alternative to heavy pasta or potato salads. Dice the carrots, bell pepper, sun-dried tomatoes, and onion. (Make sure to wash and peel accordingly). Place diced vegetables in a large bowl. Finely chop the cilantro or parsley. Add to the bowl with vegetables. Open the cans of black beans, garbanzo beans, and corn. Make sure to drain thoroughly. Add beans and corn to vegetables in the large bowl. Add lemon or lime juice to salad then drizzle with just enough olive to coat the vegetables. Stir everything together and add salt to taste. Enjoy with chips or pita bread or as a side dish with any meal.
