Press paper to remove excess fat. • While bacon is cooking, dice tomatoes. • Chop bacon. • Crack eggs into mixing bowl and beat well. Add milk if desired. • Drain fat from skillet. Wipe with paper towel if needed to get rid of excess fat. • Heat pan over medium heat. Add a little butter to the pan if desired. • Add spinach to the pan. Quickly wilt spinach. • Add tomatoes, and chopped bacon to pan. • Pour eggs over the vegetable and bacon mixture. • Cook over medium-low heat for few minutes until eggs begin to set. • Add cheese to top of dish. • Remove skillet from stove, place in oven. Cook for 10-15 minutes until done. Can finish with the broiler if desired.
