This is my grandmother’s quick and easy recipe for chocolate icing. I’ve been making icing this way for as long as I can remember. It is cheaper than the store bought kind, and it tastes much, much better! Measure out your ingredients. Put the sugar, cocoa and milk into a medium-sized pot. Mix these ingredients well. Put the pot on the stove on high until it begins to boil. Once it starts to boil, remove it from the heat. While it is still hot, add the butter and the vanilla. If you like “wet” icing, you can go ahead and pour the icing on top of the cake. This is especially good if you poke some holes in the cake and let the chocolate seep through. This probably isn’t a good way to go if you want the cake to look nice, even though it is yummy! Otherwise, let the icing stand and cool for about 20 minutes. Then beat the icing until it is thick enough to spread on the cake.
