What tasted better than carmelized onions and crispy bacon? This dip! The process of this recipe takes about one hour-mostly in carmelizing the onions. But I promise, it is well worth the effort! This recipe makes about 2 cups, so make more if you are expecting a large crowd. (I must add that thyme is one of my favorite herbs!) In large skillet, melt butter over medium heat. Add onion slices. Stir and cook, onions begin to brown, 15-20 mins. Cover and reduce heat to medium-low. Cook, until golden brown, stirring only as needed, 30 to 40 minutes. Watch carefully so as not to allow the onions to burn. Allow to cool a bit before coarsely chopping. Set about 2 tablespoons aside for garnish. Stir cream cheese and sour cream together in a medium bowl. Mix until smooth. Add chopped bacon and remaining ingredients. Blend well. Turn into attractive serving dish. Cover and refrigerate 30 minutes or more before serving. Sprinkle top with reserved bacon and garnish with thyme sprigs. Yum!
