There are three easy steps you can take to prevent fresh cherries from turning dark, depending on your taste preferences and the availability of the ingredients required. Follow these steps and you’ll have several options available. Add 1 tbsp. of lemon juice, fresh or concentrate, for every 2 cups of fresh, cut cherries to prevent the fruit from turning dark. Use 1 tbsp. of fresh or concentrated pineaple juice for every 2 cups of fresh cherries if lemon juice is unavailable, or if you prefer a sweeter taste. Crush a 500-mg vitamin C tablet in 2 tbsp. of water and drizzle over 2 cups of cherries to keep them from turning dark. Cover the bowl of cherries and refrigerate until ready to use.
