There are many many ways to make Chicken Fricassee and you can modify your recipe to suit your taste. I would make it as your directions say but INSTEAD OF the carrots and potatoes, use mushrooms and spinach and some sauteed onion, along with the seasonings and cream you would use otherwise. How i’d do it: Brown seasoned chicken in a pot with a little oil and a little butter. While chicken is browning, sweat/sautee 1/2 chopped onion and sliced mushrooms in some oil/butter until soft. Remove chicken from the pan it is in and sprinkle in 1 tablespoon flour. Mix and cook for about 2 mins, keep mixing. Add in 1/4 cup white wine and let cook for another minute. Add onions/mushrooms to the wine pot and replace chicken. Add in 1/2 can chicken stock and 1/2 cup heavy cream. Season as you wish and stir. Let reduce on low-medium heat for about 10 mins. Dash of nutmeg. Add in frozen spinach (or fresh, chopped). If you use frozen, make sure to squeeze it out before adding. Stir to combine. Make th
