How Do You Ice The Middle Layer Of A Wedding Cake?
When compared to icing the rest of a wedding cake, icing the middle layer is quite easy. This because it is the part of the cake that no one will see. Cut 4 strips of waxed paper and arrange them in a square on a turntable or on the serving dish on which you plan to present the wedding cake. Leave a space in the center of the turntable or dish so you can easily remove the strips once you’re done icing the cake. Place the bottom layer of the wedding cake on top of the waxed paper. Scoop about 1 cup of icing from its bowl using an offset spatula, and deposit it on top of the cake layer. This icing will help the top layer of the cake stay firmly on top of the bottom layer. Use the edge of the offset spatula to spread the icing over every inch of the top of the bottom layer of the wedding cake.
