Many of us remember, when we were young, putting this unattractive vegetable in water and waiting patiently for it to turn into a beautiful vine trailing over anything in its path. Your kids can set up this simple and inexpensive project in an afternoon. Choose a glass or jar that the sweet potato will fit into. Fill it with the non-chlorinated water. Wash the sweet potato and remove all dirt and debris. Leave the skin on. Hold the sweet potato vertically. 1/3 of the way up from the bottom, push the 6 toothpicks halfway into the potato at even intervals all the way around. The other half of the toothpicks should be sticking out. Place the bottom of the potato into the container resting on the toothpicks. The bottom of the potato should be submerged in water.
