How Do You Grill Campfire Armadillo Potatoes?
Camping is a favorite way to vacation for many of us because it is about nature and doing things way differently from the norm we are so used to…plus it is a cheaper way to make great memories no matter what the weather!! Here is a great recipe for those who like a fancier way to cook baked potatoes over a grill or fire. Enjoy! First, coat a washed potato with olive oil. Lay the potato down on a piece of heavy duty foil. Take a sharp knife and at 1/4″ intervals along the width, slice the potato almost all the way through leaving the bottom intact to hold it together. Put one slice of onion in between each cut of potato slice. See how it looks like an armadillo? Sprinkle with bacon bits, dill, and parmesean cheese. (Can salt and pepper it too if you like.) Wrap it up well in the heavy duty foil and leave it on the coals untouched for about 45 minutes. Test for doneness by piercing it with a fork.
