Wash the cutting board in hot, soapy water, and rinse. Use a fresh sponge dipped in white vinegar, and wipe the entire surface of the board. Allow to dry naturally. Sprinkle coarse salt (rock or sea) over the surface of the board. Fold a paper towel into quarters, and scrub the surface of the board with the salt. Let the board rest for 10 minutes and repeat. The salt will scrub the board and absorb some odors at the same time. Saturate a paper towel with lemon juice and wipe the board, working with the grain.
