Freezing a surplus of sourdough pancake mix is a good way to reduce waste and utilize the batter another time. Prepared pancake mixes should be stored in a container intended for freezer use, such as a plastic freezer container or freezer bag. Frozen batter may be stored for up to three months. Thawed batter should be used immediately, and not refrozen. Prepare dry sourdough pancake mix according to the recipe to create a batter. Allow the batter to rest for five minutes if you intend to freeze it right away. Gently stir the batter to release air bubbles. Pour the mix into a freezer container. Add a small amount at a time, and tap the container on a hard surface after each addition to release air bubbles. Continue adding the pancake batter until the container is at the desired capacity. Leave a 1-inch space between the batter and the top of the container. Add a lid to the container. Label the container with contents and date. Place the container into the freezer.
