How Do You Fold A Roti?
A simple flat bread of Indian origin served as a side dish, roti has crossed the oceans to appear in the West Indies as a wrapper for fillings, similar to won ton wrappers or tortillas. As when making wrapped or folded dishes form other cultures, no right or wrong way to fold a roti exists, but to keep all of your fillings inside the flat bread, you should fold it so you leave no openings for food to spill. Practice folding several roti and after just a few, you will feel like you grew up in a Caribbean kitchen. Lay the roti flat onto a platter. Spoon 2 to 3 tbsp. of filling in the bottom 1/3 of the roti at least 2 inches from the bottom edge of the roti. Pull the bottom edge up and over the filling to cover. Fold the two side edges over toward the center so they overlap over the covered filling. Bring the top edge down to cover the seams made by the overlapping edges of the roti to create a square or rectangular pouch.
