My favorite meal to fill the bill when unexpected guests drop by is a baked potato bar. Enlist one or two of your guests to help prepare the toppings, open several cans of chili to heat, pop a few potatoes in the oven, and voila-a buffet meal that everyone will love in half an hour or less. Gather your helpers in the kitchen and assign the onion chopping, cheese grating, and potato scrubbing tasks to them. While these tasks are being accomplished, open the chili and place it in a large pot over low heat. Stir frequently to keep it from scorching. Use your favorite cooking method to microwave the potatoes. Some people like to wrap them in plastic, others bake them in a covered container, and still others just place a paper towel over them. If everyone is eating at the same time, cook all the potatoes at once. Otherwise, just cook the potatoes as they are needed.
