How Do You Dry Sourdough Starter (Flakes)?
You have a successful sourdough starter that you started or received from a friend or family member. This is a good time to dry some starter for future use, maybe you are going on vacation, want to mail some starter to a friend, or just don’t intend to make any sourdough bread for a few weeks. Maybe you have the perfect strain of yeast and want to preserve it for future use. You might want to dry your sourdough starter (also known as sourdough flakes). Ensure that your sourdough starter was fed the previous day, spread a thin layer on plastic wrap and let it sit a day or so until it is dried out. The starter can then be broken up into flakes (hence the name sourdough flakes) and stored in a resealable container (you can store the yeast in your freezer). When you are ready to reconstitute the sourdough flakes, take about a tablespoon of the flakes and add to lukewarm water to make a paste. Slowly mix another cup of lukewarm water to the paste, then mix 1 ΒΌ cups of flour to the mixture.
