Like other sugars, table sugar dissolves easily in water. As individual sugar molecules interact with the water molecules, they break free from the surface of the cube. The more rapidly these molecules drift away, the more rapidly other sugar molecules can take their place, and the less time it takes for the sugar to dissolve. Stirring the water accelerates the process by dispersing the sugar throughout the solution. Leave the pitcher of water out until it reaches room temperature. Place the cube of sugar in a glass of the water. Stir the water. The sugar gradually seems to “disappear” as it dissolves.
