Leek soup can be used to detoxify the body, thanks to the main ingredient and supporting vegetables such as onion and garlic, all of which draw fluids out of the body. As a result, the soup will keep you full while promoting weight loss. The leek soup diet should only be followed for a short period of time, preferably not longer than three to five days. Pour 2 tsps. of olive oil into a saucepan. Add one finely chopped onion to the saucepan and turn the stove on low heat. Add one finely chopped leek and cook it until the leek becomes soft. Add 2 cups reduced-salt vegetable stock, 3 1/2 cups of chopped tomatoes, one peeled and chopped carrot, one stalk of chopped celery and 4 cups of pumpkin to the saucepan. Bring everything in the saucepan to a boil, then reduce the heat. Let everything simmer for 10 minutes. Mix in steamed broccoli, and the soup is finished. Save leftover soup and use it to replace lunch and dinner for three to five days.
